About Us
We’re serious about pastries, but not much else.
Like most great ideas, this one started as a little joke. While working as the commissary kitchen for Twelve, Evo, The Good Table, and (soon to be) Douro, we would create new little treats in development and share them amongst ourselves.
Soon we started saying things like “this is great, too bad we’re not a bakery” or “this might need more time, good think we’re not a bakery”. The truck came along, but the name stuck.
We are not a bakery - we are a truck with baked goods, developed in-house as we played around with our favorite flavors, family recipes, and leftover products. We’ve made some things that we’re immensely proud of and some things that will never see the light of day.

A lifelong baker and sweet tooth, Georgia left for Le Cordon Bleu in Paris, France the day she graduated high school, where she was awarded a degree in Pastry Arts.
She relocated to Portland, Maine after culinary stints in New Zealand, Martha’s Vineyard, and notably the Tartine Bakery in San Francisco. Her work has been featured in Vogue, the Wall Street Journal, NYT and more.
